3 Popsicle Recipes to Cool You Off This Summer
With the relentless heat of summer upon us, it’s time to get creative and cool off with these original popsicle recipes from founder of food blog Live Eat Learn, Sarah Bond. She’s also author of the sizzling summer cookbook, For the Love of Popsicles.
Mudslide
- ¼ cup coffee liqueur (like Kahlua)
- ¼ cup Irish cream (like Baileys)
- ½ cup coffee, chilled
- 1 cup canned coconut milk
- ¼ cup unsweetened cocoa powder
- 2 to 4 Tbsp honey or sugar, to taste
1. Whisk ingredients together until smooth, adding more or less honey.
2. Pour into molds, leaving a little space at the top for them to expand. Insert sticks and freeze until hard (at least 8 hours). If mixture is too liquid for sticks to stand straight up, let freeze for about 1 hour, then insert sticks.
3. Run them under warm water for seconds to loosen them up, then remove from the mold.
Bloody Mary
- 1 ½ cup tomato juice
- ⅓ cup vodka
- 1 Tbsp lime juice (½ of a lime)
- 1 tsp Worcestershire sauce
- ½ to 1 tsp Tabasco sauce, to taste
- 1 clove garlic, minced
- ¼ tsp salt
- ¼ tsp smoked paprika
- Pinch of ground black pepper
1. Whisk together all ingredients, adding more or less Tabasco sauce.

Key Lime Pie
- 1 banana
- ¾ cup plain Greek yogurt
- ½ cup cream cheese
- ¼ cup fresh lime juice (2 limes, key lime or regular)
- ¼ cup honey
- 2 Tbsp finely grated lime zest (2 limes)
- ½ tsp vanilla extract
- Optional topping: ½ cup graham cracker crumbs
1. Combine all ingredients in a blender until smooth.
2. Pour into molds, leaving a little space at the top for them to expand. Insert sticks and freeze until hard (at least 4 hours).
3. Run the mold under warm water for a few seconds to loosen them up, then remove from the mold. Sprinkle with graham cracker crumbs. Tip: They stick best once the pops are a little soft.
